Cheesemaking is doable and fun. It takes time, patience, and practice, just like any other artisan craft, but well worth your time.




Milk Collection: Start by collecting fresh milk, preferably from goats or sheep. Cow’s milk can also be used.
Heating the Milk: (30°C) in a large pot or vat. You can use a thermometer to monitor the temperature.
Adding Starter Culture: Add a starter culture (usually mesophilic bacteria) to the milk. This culture helps acidify the milk and kickstart the fermentation process.
Rennet Addition: Next, add rennet to the milk. Rennet is an enzyme that coagulates the milk proteins, forming curds. Stir gently to distribute the rennet evenly.  This is the best deal for Junkets/Rennet
Curd Formation: Allow the milk to sit undisturbed for about 1 hour. During this time, the curds will form and separate from the whey.


Cutting the Curds: Cut the curds into small pieces using a long knife. The size of the curds depends on your preference (larger curds for creamier cheese, smaller curds for drier cheese).  Curding needs Junket to happen.  Buy Junkets/Rennet here.
Cooking the Curds: Slowly heat the curds to 110°F (43°C) while stirring gently. This helps expel more whey and firm up the curds. Buy this highly recommended thermometer, I bought two, one for meats and one for other non-meat ingredients.
Draining and Salting: Once the curds reach the desired consistency, transfer them to a cheesecloth-lined colander. Let the whey drain off. Sprinkle salt over the curds and mix gently.
Pressing the Curds: Place the curds in a cheese mold and press them to remove excess whey. You can use weights or a cheese press. Press for several hours or overnight.


Aging: Remove the cheese from the mold and let it air-dry for a day or two. Then, transfer it to a brine solution (saltwater) for a few days. Finally, age the cheese in a cool, humid environment for at least 2 weeks.
